Thattukadas are the signature street food stalls of Kerala. They are often small push carts with covered top or vans. They mostly come to life at night and provide cheap but tasty food to people. Soon our nadan thattukadas will undergo a major makeover as the government is planning to turn these food stalls into clean and healthy eateries.<\/p>\n

The plan is to bring all thattukadas under a single brand and provide a uniform for all the workers working at thattukadas across the state. They will be issued ID cards and license to run thattukadas. A pilot project has already started in Palakkad.<\/p>\n

Clean and Hygienic Environment<\/h2>\n

The vendors will be trained to operate their food stall in hygienic conditions. They will also have to provide customers with clean drinking water, bathroom facility etc. Plus, they will have to shift their stall if the current location is not hygienic or fails to provide a healthy ambience.<\/p>\n

Health card for cooks and waiters<\/h2>\n

After a medical examination, a health card will be given to those who are cooking and serving foods to customers. This way only those who are medically qualified and healthy enough to do the job will be preparing the food.<\/p>\n

Thattukadas with International Standards?<\/h2>\n

All these steps mean that all the thattukadas operating in the state will meet a certain international standard. This is already being done in Singapore and that same model will be implemented in Kerala too. Vendors are positive about the new changes as it will get them more business.<\/p>\n

Banking access for Thattukada operators<\/h2>\n

The new scheme will also provide legal rights to street food vendors. They will be able to get social rights to access credit facilities and loans from banks. Currently, they have to depend on local moneylenders who often take advantage of them when it comes to borrowing money. Street food vendors will achieve financial literacy through this step.<\/p>\n

Once the scheme is implemented, unhygienic cooking conditions and cheap raw materials used by thattukadas will be thing of the past. By providing them with a uniform standard for cleanliness and a dress code, people will take them more seriously. This means more business for them.<\/p>\n

So does this mean that thattukadas will get costlier? The answer is probably yes. But that is justifiable as the there is a huge improvement tin quality of the service provided. Customers can be assured that their food will be produced and supplied following proper health standards.
